Ice wine, sometimes spelled icewine or, in Germany, Eiswein, is a very sweet and relatively expensive dessert wine. The grapes used to make ice wine are allowed to remain on the vines until after the first major frost of the season and are then picked by hand. This freezing causes the sugars in the grapes to concentrate, resulting in a sweeter wine.http://www.wineintro.com/types/icewine.html http://www.winesofcanada.com/icewine.html
Serving Information
Ice wine is served cool, but not ice-cold. Due to its sweet, fruity flavor it may often be served after dinner, either on its own, or paired with fresh fruit. Although it is often served in a small liqueur glass, some wine purists argue that it should be served in a wine glass with a large bowl, to intensify the flavor and aroma.http://www.winesofcanada.com/icewine.html
