Huevos Rancheros, also known as ranch eggs are a traditional Spanish breakfast, consisting of fried eggs, chili salsa, refried beans, sliced avocado, fried potatoes, olives, and chili peppers, served on a fried corn tortilla.
Huevos Rancheros was traditionally served to farm workers who usually had a small meal at dawn later followed with a large mid morning breakfast.
American Variations
Huevos Rancheros has become extremely popular in the United States and so are specialty additions and revisions to the original recipe such as:
- Poaching the eggs in a tomato-bacon sauce, and served on toast.
- Flour tortillas instead of corn
- Pure chili sauce or enchilada sauce instead of tomato-chili
- Cheese, sausage, and sour cream is added
- Garnished of fresh tomatoes and lettuce
For the Kids
Use a soft flour tortilla, stuff with avocado, fried egg, bacon, baked beans, roll and lightly grill until golden brown. Serve with a dolop of sour cream.
