What You'll Need
- Potato (unpeeled)
- Knife
- Cutting board
- Mandoline (with your blade of choice)
Step 1: Potato Setup
- Place the potato on the cutting board.
- Use your knife to cut the potato in
half horizontally.
- Set aside one half of the potato for the moment.
Step 2: Mandoline Setup
- If your mandoline slicer has a stand, use the stand to prop up
your mandoline.
- Place the cutting board under the mandoline.
- Choose and insert whichever interchangeable blade you prefer into the upper blade slot. Different sizes of blade result in thicker or thinner cuts.
- Set your mandoline's dial to 1/8-1/4 inch. Do not set it any thicker—that would not produce a waffle-style cut.

The Guard
The safest way to use your mandoline is with a guard. However, in this situation, Scott Aaronson is not using a guard. His reason for this is that because the guard has a track on it, it can get in the way when
rotating the potato. If you choose not to use a guard, make sure to be very careful while waffle-cutting the potato.
