Step 1: If You Have More Than 2 Cups of Leftover Vegetables

- Combine 2 cups of vegetables with 2 cups of cooked meat, 2 cups of cooked rice or noodles, and 2 cups of sauce or gravy (or condensed soup and milk to equal 2 cups), for a simple casserole. Bake until heated through, about 30 minutes.

- Add to a soup. Cooked vegetables should be added towards the end, so they don't become too soggy.
- Combine with a chopped onion and gravy to fill a pot pie.
- Reheat in olive oil and garlic and toss with pasta.
- Chop and use in a frittata.
