How to Use Leftover Vegetables

Do you need great leftover vegetable recipes? if you don't want to waste food, but your family balks at seeing the same food twice, read on! This page will teach you how to use leftover vegetables.

Using leftovers wisely can not only save you money, it can save you time as well. Since most of the prep work has already been done, the cooked vegetables can be easily incorporated into another dish. Leftover mashed potatoes can become the topping to Shepherds Pie. Leftover corn can be incorporated into cornbread fritters and leftover broccoli or soup make an excellent cream soup.

Some cooks keep resealable bags in their freezer, accumulating leftover vegetables for use in a soup or stock. Make sure not to combine strong flavored vegetables, such as turnips, in the same bag with other less potent vegetables.

Step 1: If You Have More Than 2 Cups of Leftover Vegetables

  1. Cover with a cheese sauce, and serve as a side dish.
  2. Top with buttered bread crumbs and grated cheese. Bake for 20 minutes.
  3. Combine 2 cups of vegetables with 2 cups of cooked meat, 2 cups of cooked rice or noodles, and 2 cups of sauce or gravy (or condensed soup and milk to equal 2 cups), for a simple casserole. Bake until heated through, about 30 minutes.

Step 2: If You have 1-2 Cups of Leftover Vegeatbles

  1. Add to a soup. Cooked vegetables should be added towards the end, so they don't become too soggy.
  2. Combine with a chopped onion and gravy to fill a pot pie.
  3. Reheat in olive oil and garlic and toss with pasta.
  4. Chop and use in a frittata.

Step 3: If You Have Less Than a Cup of Leftover Vegetables

  1. Marinate them in a vinaigrette dressing and add to a salad.
  2. Puree them and add to a tomato sauce.
  3. Chop the vegetables finely finely, and mix into a meatloaf
