Mahalo natural food expert Kristina Jackson pays a visit to a local farmers' market to illustrate how to select the best beets.
Color and Texture
Choose small or medium-sized beets that have a deep maroon color. Smaller, younger beets might be so tender that peeling won't be necessary.c There should not be any blemishes, growths, cracks or wet areas, which indicate spoilage on the beets.
Firmness
Squeeze the beets to test their firmness. If a beet is a little soft, that means it is slightly overripe. A firm beet is a healthy beet. Lively Greens
Good quality beet greens will be dark green with rich red veins and long, upright stalks. This ensures that they are not too ripe. Check to make sure that the greens are not wilted, yellow in color or have dark green patches of slime on parts of the leaves.
