You can customize a marinade to your family's tastes, adding spices and seasonings that will complement the rest of the meal. Consider adding some marinade when you freeze chicken pieces - that way the meat will marinate as it thaws. -
Step 1: What You Need to Marinate Chicken
- Chicken, whole or pieces
- Large resealable bag
- 1/2 cup of marinade for every pound of meathttp://www.extension.org/pages/Tips_for_Safe_Meat_Marination
- Roasting pan or pie plate
Step 2: Basic Marinade
While beef marinades may not include oil, chicken benefits from a marinade that includes oil as there is not a lot of fat in the meat. You can use a prepared salad dressing as a marinade, or make your own, as follows:
- Acid: 1 cup of wine, beer, vinegar, or citrus juice
- Oil: 1 cup of vegetable or olive oil
- Flavorings:, as desired
- 1-3 cloves of garlic, pressed or minced
- 1/4-1 teaspoon salt
- 1 teaspoon - 1 tablespoon dried herbs
- 1-4 tablespoons fresh herbs, minced:freshly ground pepper
- 1/2-1 cup soy sauce
- 1-4 tablespoons Worcestershire sauce
- 1 tablespoon- 1/2 cup sugar, brown sugar, honey, maple syrup, or molasses
- Combine all ingredients in a jar and shake until blended. Refrigerate unused marinade.
Step 3: How to Marinate Chicken
- Place the chicken in the resealable bag.
- Add 1/2 cup marinade per pound of meat.
- Close bag and turn to distribute marinade.
- Place bag in pie plate or roasting pan (to catch leaks) and refrigerate.

- Remove meat from marinade, and then bake, sauté, or grill, as desired.
- Discard marinade - do not use it to baste the chicken because of the risk of contamination.
