Turkey drippings, white wine, thyme, salt, pepper and heavy cream are also the other key ingredients to making this flavorful gravy.

- 1 cup white wine
- 1 cup milk
- 3 tablespoons butter
- 2 tablespoons vegetable oil
- Freshly ground pepper and salt
- 1 cup minced onion
- 2 tablespoons all purpose flour
Step 3: Directions
- Heat vegetable oil in a medium saucepan over medium heat.
- Add the onions and saute them until they are tender.
- Using the salt and pepper, begin seasoning the onions.
- Add butter and flour and cook for at least 2 minutes.
- Add white wine and bring it to a boil. Cook until reduced by half.
- Reduce the heat and allow it to simmer. Add the milk and continue to simmer until it has thickened.
- Serve warm.
Step 4: Variations
You can also use the juices from a roasted turkey to make white wine gravy. The majority of the recipes for this variation call for chicken broth or turkey giblet stock, onions, flour and wine (eliminating the milk).
