Mediterranean Veggie Kabobs
As Expert Village chef Matt shows in this video for making a Mediterranean marinade, veggie kabobs can be prepared in hundreds of variations, by using different veggies and marinades to your liking. In this version, he uses a marinade with lemon juice and oil, mixed with crushed garlic and rosemary. Additionally, as he shows here, the vegetables may be marinaded in a bowl before they are assembled on the skewers.

Introduction
As a unique alternative to bland or boring vegetables, serving veggie kabobs at your next cookout is sure to please. In addition to gathering your ingredients, you will need to prepare and marinade the kabobs, then grill them. -
Step 1: Gather Your Ingredients
- 4 medium onions, vidalia and red onions work best
- 2 medium zucchini, cut into one-inch slices
- 2 medium yellow squash, cut into one-inch pieces
- 2 bell peppers any color, cut into large chunks
- 16 cherry tomatoes
- 8 oz fresh mushrooms, washed
- 2 ears fresh corn, cut into two-inch pieces
- 8 oz marinade, teriyaki and garlic marinades work best
Step 2: Prepare Veggie Kabobs
- Assemble the kabobs by threading the vegetables on the kabobs, alternating colors
- Place the kabobs in a large baking pan and brush with the marinade
- Cover and refrigerate for at least two hours
- Pre-heat your grill to medium
- Cook the kabobs on the grill until they are tender and lightly charred, about 15-25 minutes
- Remove the kabobs from the grill, serve and enjoy
Step 3: Veggie Kabob Variations
- Experiment with your choice of vegetables; broccoli, eggplant and even boiled potatoes can be added
- Try different marinades, including homemade varieties
- Add chunks of tofu for extra protein
- Sprinkle with feta or parmesan cheese before serving
- If a grill is not available, kabobs can be cooked under the broiler
