If you don't eat meat (or even if you do), learning how to create your own soups, stews and stocks from vegetarian ingredients will enable you to whip up healthy, satisfying bowlfuls of goodness right from your own kitchen.
Step 1: Learn to Make Stock
- A good, flavorful stock (or broth) is the backbone of just about any decent soup. Many recipes call for chicken or beef broth, but vegetable broth can be equally flavorful and is an excellent substitute. Here is a basic stock recipe:
Ingredients

- 8 Cups water
- 1 Large onion, chopped
- 3 Garlic cloves, peeled and chopped
- 2 Celery stalks, cut into large pieces
- 2 Carrots, cut into large pieces
- 1 Potato, diced
- 2 Leeks, cut into large pieces (white and light-green parts only)
- 2 Bay leaves
- 2 teaspoons Italian herb blend
- Salt and pepper to taste
- Add crackers to your soup
Cooking Method
- Pour ingredients into a large pot. Bring to a boil. Cover, and simmer over low heat for an hour or so. Strain and refrigerate.
