Although you can purchase a package of corn or flour tortillas at your local supermarket, making your own at home is a relatively easy process. Not only are homemade tortillas fresher and tastier than store bought, since they are made without artificial ingredients or preservatives, they are also better for you. Step 2: Make the Dough
- Before you begin making your dough, be sure to wash your hands, since you will be using them to knead the dough. The recipe below will make about eight large tortillas.
- Mix the dry ingredients (flour, baking powder and salt) in one bowl
- Place the milk and oil in the other bowl and blend them with a whisk
- Add the liquid mixture slowly to the dry ingredients, stirring as you do so
- Dust your counter or work surface with flour
- Place the dough onto the floured surface
- Knead the dough with your hands, using the same process you would when making bread. Knead the dough until it has lost its sticky consistency (about two or three minutes)
- Place the dough into a bowl, cover it with a moist towel and allow it to sit at room temperature for about 10-20 minutes
- Separate the dough into eight equal portions and roll each portion into a ball
- Place the dough balls back into the bowl, cover the bowl again and let the dough sit for another 10-20 minutes
Step 3: Roll and Cook the Tortillas
- You can either cook the tortillas as you go, or roll them all out and cook them afterward. Just follow the steps below.
Rolling the Tortillas
- Dust your counter or work surface with flour
- Place one of the dough balls on the floured surface
- Pat and press the dough into a flat circle about half the desired size of your finished product
- Dust the top of the dough with flour to prevent it from sticking to the rolling pin
- Using your rolling pin, gently roll out the dough until is is a large, flat circle, about eight inches in diameter. The tortilla should be about 1/4 inch thick and of uniform thickness
Cooking the Tortillas
- It only takes about one minute to cook each tortilla, so be sure to set a timer or keep a close eye on the tortillas as they cook.
- Place your skillet on the stove and set the burner to high
- Once the skillet is warm, gently place a tortilla in it
- Cook the tortilla for about 30 seconds
- Flip the tortilla and allow the other side to cook for about 30 seconds
- Remove the tortilla from the skillet and place it in a tortilla warmer or aluminum foil to keep it warm while you cook the others
Step 4: Cook the Tortillas
- Cooking each tortilla only takes about a minute. Overcooked tortillas may be dry or crunchy.
- Place your skillet on the stove and heat it to high
- Remove a tortilla from the waxed paper and gently slide it into the skillet
- Cook the tortilla for approximately 30 seconds
- Flip the tortilla over and cook it for another 30 seconds
- Remove the tortilla from the skillet and place it in a tortilla warmer or tea towel to keep it warm while you cook the other tortillas
- Repeat the above steps to cook all your tortillas
- Corn tortillas are best served fresh, but if you don't use them all, place the remaining in an air tight container and store them in the refrigerator for up to a week
