Tofu fries can be a great way to cut carbohydrates from your diet while still enjoying the flavor of sweet potato fries.

1. Preheat your oven to 400º F (204º C).
2. Slice the tofu lengthwise into thin strips. You can adjust the size of the slices to your preference. Thinner slices will cook faster.
3. Sprinkle the baking tray with about 3 to 4 tablespoons of olive oil. Try to cover the bottom of the pan as evenly as possible.
4. Now make the seasoning mixture by combining the olive oil or peanut oil, agave nectar, curry powder, dried basil and sea salt. Stir all ingredients together until well mixed.

5. Place the tofu strips on the baking tray, spacing them out so they don't touch.
6. Spoon your seasoning mixture over the fries. Make sure they are evenly coated with the mixture and the olive oil on the tray.
7. Place the baking tray in your pre-heated oven.
8. Allow the fries to cook for 12 to 15 minutes, or until they start to turn brown.

9. Remove the tray from the oven and flip the fries over to the other side.
10. Return the tray to the oven and cook for an additional 12 to 15 minutes.
11. Remove the tray from the oven and put the fries on a plate. Serve the fries with
tofu mayonnaise while still hot.
