What You'll Need
- 1 9-inch pastry crust, unbaked
- 2 cups mashed sweet potatoes
- 2 eggs, beaten
- 1 1/4 cups milk
- 3/4 cup sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsp rum
- 4 tbsp butter, melted
- Mixing bowl
- Electric mixer
- Spatula
- Pie tin
Instructions
- Preheat oven to 425° F (218° C).
- Combine the ingredients (except for the crust) in a bowl and beat until smooth.
- Pour the filling into the crust.
- Bake for 10 minutes. Reduce heat to 300° F (148° C) and bake for 45-60 minutes more or until the filling is firm.
