Step 1: What You Need to Make Strawberry Ice Cream
- 3 cups fresh or frozen strawberries, pureed
- 1 1/2 cups milk
- 3/4 cup sugar
- 1/8 teaspoon salt
- 2 egg yolks, beaten
- 1 tablespoon vanilla
- 1 cup heavy cream
Step 2: Make the Strawberry Custard
- Warm the milk over low heat. Do not boil.
- Stir in the sugar and salt to the warm milk, cooking until dissolved.
- Bring water to boil in the bottom of a double boiler.
- Off the heat, place the eggs in the top of the double boiler.
- Whisk the warm milk mixture into the eggs.
- Place the top of the double boiler containing the eggs and milk over the boiling water, and cook until thickened, whisking constantly.
- Remove from heat, and blend in the strawberry puree.
- Chill several hours or overnight.
- Add 1 tablespoon vanilla, and mix well.
- Whip the cream and fold it into the strawberry custard.
Step 3: Make the Strawberry Ice Cream
There are several ways to make ice cream. You can use an ice cream maker, or use a method that produces ice cream without a machine. If you're using a machine, make sure to follow the manufacturer's instructions for best results.- Make sure the strawberry custard is well chilled before beginning.
- If your ice cream maker requires salt, make sure to use rock salt specifically labeled as food safe.
- as slowly frozen ice cream is smoother, use the minimum amount of salt suggested for your machine.
