Introduction
A steamed pudding is a dense cake, usually served warm, and accompanied by a brandy, butter, and sugar mixture known as hard sauce. You can also serve the puddings with whipped cream, creme anglais, or lemon sauce, if you'd like a lighter sauce. -
About Steamed Pudding
Steamed puddings are cooked slowly, over boiling water. As the pudding cooks, the fat (usually suet, but can also be butter) dissolves and moistened the cake. There are a few general principles common to allow steamed puddings.- Butter the pudding mold wee, so that the pudding can be removed easily.
- Make sure the pudding mold has a lid, to prevent water splashing in whle its cooking. If your mold doesn't have a lid, securely fasten a double layer of foil on top after the batter is in the mold.
- The pudding mold should be raised off the bottom of the cooking pot, on a steaming or canning rack.
- Don't let he pot boil dry; keep adding water so that the mold is covered half to two-thirds up its side.
How to Make Chocolate Steamed Pudding
Plum Pudding Ingredients
- Butter to grease the pudding mold
- 3 ounces unsweetened chocolate
- 6 tablespoons butter
- 1 cup sugar
- 2 eggs, beaten
- 2/3 cup milk
- 2 teaspoons vanilla
- 2 cups flour
- 1/2 teaspoon salt
- 3 teaspoons baking powder
How to Make Steamed Cranberry Pudding
- Butter the pudding mold and set aside.
- Heat the water in the pot.
- Combine flour, salt, and baking powder and set aside
- Melt the chocolate and butter.
- Add the sugar and eggs, beating until smooth.
- Stir in the flour mixture and beat until well blended.
- Spoon batter in to the prepared mold.
- Steam for 1 1/2 hours, and cool for 10 minutes before unmolding.
- Serve with sweetened whipped cream to which a teaspoon of vanilla has been added.

- Butter to grease the pudding mold
- 1/3 cup butter at room temperature
- 1 cup sugar
- 2 eggs, beaten
- 2 1/3 cups flour
- 1/4 teaspoon salt
- 2 1/2 teaspoons baking powder
- 1/3 cup milk
- 1 1/2 cups cranberries
- 1/2 cup walnuts, chopped
- 1 tablespoon grated orange rind
How to Make Steamed Cranberry Pudding
- Butter the pudding mold and set aside.
- Heat the water in the pot.
- Combine flour, salt, and baking powder and set aside
- Cream butter and sugar.
- Add the eggs.
- Add the milk and the flour mixture, and blend well.
- Stir in the cranberries, walnuts, and orange rind.
- Spoon batter in to the prepared mold.
- Steam for 2 1/2 hours, and cool for 10 minutes before unmolding.
- Serve with sweetened whipped cream to which a tablespoon of Grand Marnier has been added.
