Step 1: What You Need To Make Spanish Rice
- 4 tablespoons olive oil
- 1 garlic clove, minced
- 1 onion, finely chopped
- 2 cups rice
- 1 tablespoon tomato paste
- 4 cups chicken broth
- 1/8 teaspoon oregano
Step 2: How To Make Spanish Rice
- Sauté the onion and garlic in the oil until the onion is soft.
- Add the rice, and continuing cooking for 5 minutes
- Combine the remaining ingredients and bring to a boil.
- Add the boiling stock mixture to the rice, cover, and reduce heat.
- Cook for 25 minutes or until the rice is tender.
Step 3: Spanish Rice Variations
- Substitute 1 cup chopped tomatoes for the tomato paste. If you choose this option, sauté the tomatoes with the onions.
- Add 1 /2 cups of salsa to 4 cups of cooked white rice for instant Spanish rice.
- Render 1/2 lb. of chopped bacon, and use the bacon fat instead of the oil to sauté the onion and rice.
