Step 1 : What You Need to Make Southern Fried Chicken
- For 2 1/2 pounds of chicken pieces, you'll need:
To Brine the Chicken
- 3/4 cup coarse kosher salt
- 3/4 cup granulated sugar
- 1 cup boiling water
- 1 gallon cold water
- 1 tablespoon black pepper
- 1 large bowl
To Coat the Chicken
- 1 tablesppon black pepper
- 1 tablespoon garlic powder
- 3 cups flour
- Large plastic bag
To Fry the Chicken
- 1 1/2 cups lard or solid vegetable shortening, such as Crisco
- Cast Iron Skillet
- Tongs
- Brown paper bags to drain the chicken
Step 2: Brine the Chicken
- Place the chicken in a large bowl.
- Combine the brine ingredients, and pour over the chicken, making sure the chicken is completely submerged.
- Refrigerate for 1 1/2 hours.
- Remove the chicken from the brine.
Step 3: Coat the Chicken
- Combine the coating ingredients in a plastic bag.
- Place the chicken pieces in the bad one at a time.
- Shake until well coated.
Step 4: Fry the Chicken
- Melt the fat in the skillet, heating it to 350 degrees.
