How To Make Sorbet Introduction
The basic ingredients for sorbet are fruit juice and sugar. You can make your own fruit juice, or start with prepared juice. The sugar will incorporate more smoothly into the sorbet if you use simple syrup instead of granulated sugar. A small amount of vodka functions as an "antifreeze", making the sorbet smoother and less likely to contain ice crystals. Fruit purees, zests, liqueurs, and other flavorings can all be added to a sorbet.
Step 1: What You Need to Make Sorbet
- 1 1/2 cups fruit juice
- 1 cup simple syrup
- 1 tablespoon vodka
Step 2: How to Make Sorbet
- Combine all ingredients in a metal bowl.
- Place in the freezer for 30 minutes to chill thoroughly.
- Pour chilled mixture into your ice cream machine, and process until firm.
- Transfer to a lidded container and place in freezer for at least 2 hours or up to 3 days.
Step 3: Sorbet Variations
- Substitute other liquors for the vodka. Kirsch would enhance a cherry sorbet, framboise would work with with raspberries, and rum might be a good choice for a banana sorbet.
- A granita is similar to a sorbet, but instead of using fruit juice, you substitute pureed fruit.
- A teaspoon of lemon juice or balsamic vinegar can improve the flavor of any fruit sorbets.
