How To: English Roast Potatoes
If you're in a hurry for roasted potatoes, and don't have time to roast them for an hour as suggested on this page, you may want to try the alternate method presented in this video. The potatoes are boiled until soft, and then tossed with olive oil and salt. The are placed in a single layer on a cookie sheets, and roasted at very high heat (450 F) for 10 minutes to brown them.

Step 1: Ingredients for Roasted Potatoes
Lay out all the ingredients before you begin to cook. The potaoes can be peeled and cut ahead of tip; keep them in a bowl of ice water to prevent discoloration.
- 2 pounds of potatoes, washed, peeled, and cut into 3/4 inch chunks
- 1 onion, chopped
- 1/4 cup oil or pan drippings
- Salt and pepper as desired.
Step 2: How to Make Roasted Potatoes
- Place the potatoes in a pot and bring to a boil.
- Boil for 10-15 minutes, depending on the sie of the potato chunks. Do not cook longer than 15 minutes.
- Drain the potatoes.
- Toss the potatoes and onions with the oil.
- Season to taste with salt and pepper.
- Place in a 9x13 roasting pan and roast for one hour, turning once or twice while roasting.
Step 3: Variations for Roasted Potatoes
- Add 1 teaspoon dried rosemary or tarragon to the potatoes when tossing with the oil.
- Add two chopped green or red peppers to the potato and onion mixture.
- You can place the potatoes around a roast if you are cooking with meat. Decrease the amount of fat needed to 2 tablespoons, as the meat will produce additional drippings while roasting. If you remove all the drippings before placing the potatoes in the pan, and reserve what you need for gravy. If, after reserving the drippings for gravy you don't have the 2 tablespoons needed for the potatoes, use oil or butter to coat the potatoes. Make sure the meat has at least an hour left to roast when you add the potatoes to the pan.
