
1. Preheat grill to medium. Mix butter, shallots, snipped basil, lime juice and chipotle peppers in small bowl. Chipotle peppers are smoked jalapeno peppers, and the chipotle taste is in both the butter and the paste. Set the butter mixture aside.

2. Mix ground cumin, paprika, salt, white pepper, adobo sauce and olive oil in another small bowl.

3. Brush mixture onto steaks, coating generously on both sides.

4. Add steaks to grill using tongs. Grill uncovered for five to six minutes on each side. Remove from grill and place onto serving tray. Add one dollop of chipotle butter on top of each steak. Garnish with basil and lime wedges.
