Step 1: Ingredients for Red Velvet Cupcakes
- 2 1/2 cups flour, mixed with 1 teaspoon salt, 2 tablespoons cocoa powder and 1 teaspoon baking soda
- 1 stick unsalted butter, at room temperature
- 1 1/2 cups sugar
- 2 eggs
- 1/8 cup water
- 1/8 cup red food coloring
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 2 cups cream cheese frosting
Step 2: How to Make Red Velvet Cupcakes
- Preheat the oven to 350 degrees F
- Prepare 24 muffin cups with cupcake papers or by greasing and flouring them
- Cream butter and sugar until fluffy.
- Combine buttermilk, eggs, water, food coloring, vinegar, and vanilla until well blended.
- Add the flour mixture to the wet ingredients and mix until smooth.
- Fill each cupcake cup 2/3 full.
- Bake for 20 -25 minutes until a toothpick placed in the center of the cupcake comes out clean.
- Cool thoroughly.
- Frost with cream cheese frosting.
Step 3: Red Velvet Cupcake Tips
- Skip the frosting as just dust the cupcakes with confectioner's sugar. Use stencils to create hearts, stars,etc.
- Layer a tablespoon of cheesecake filling in the middle of the batter for red velvet cheesecake cup cakes.
- Buttercream frosting can be substituted for the cream cheese frosting.
