What You'll Need
12-15 asparagus stalks
- 2-3 sprigs basil
- 2-3 sprigs mint
- 1/4 cup olive oil
- 1 tbsp white wine vinegar
- Salt and pepper to taste
- 1/4 cup pine nuts
- Knife
- Cutting board
- Large mixing bowl
- Small mixing bowl
Step 1: Prepare the Asparagus
Snap off the thick, lighter section of the base of the asparagus stalks.
- Cut the asparagus stalks at a diagonal angle into small pieces.
- Put the asparagus pieces in the large mixing bowl.
Step 2: Prepare the Basil
Pick the stems off the sprigs of basil.
- Roll the basil leaves into long, thin tubes.
- Chop the basil tubes at a diagonal angle.
- Sprinkle the basil pieces into the mixing bowl with the asparagus.
Step 3: Prepare the Mint
Pick the stems off the sprigs of mint.
- Chop the mint leaves at a diagonal angle into small pieces the same size as the basil.
- Add the mint to the mixing bowl with the asparagus and basil.
Step 4: Prepare the Vinaigrette
Pour the white wine vinegar into the small mixing bowl.
- Add the olive oil, salt and pepper to the bowl.
- Whisk the ingredients together.
Step 5: Mix It Up
Put the pine nuts into the bowl with the asparagus, basil and mint.
- Pour the vinaigrette over the ingredients in the large mixing bowl.
- Mix together the ingredients until the asparagus, basil, mint and pine nuts are coated with the vinaigrette.
- Serve as a main dish or as a complement to your favorite fish recipe.
