Introduction
- Sometimes referred to as a Mexican grilled cheese, a quesadilla usually contains more than cheese. Onions, peppers, chicken, beef, or whatever you like can all be combined to make this quick and easy Mexican dish. Quesadillas can be sliced into small pieces and served as an appetizer, or they can be eaten as a lunch or light dinner.

What You'll Need to Make Quesadaillas
- The list of supplies you'll need to get started is short. The precise ingredients will depend on what's going inside the quesadilla, but in general you'll need:
- Tortillas
- Butter or oil
- Shredded cheeses
- Filling ingredients of your choice
- Beans
- Chopped vegetables, such as onions, peppers and/or tomatoes
- Shredded chicken, beef, or pork
- Shrimp
- A heavy frying pan, or grill. A cast iron pan works well. You do not need a specialty quesadilla press.
- A spatula
- A stove top
Step 2: Prepare Sauces to Serve with Quesdillas
- Although quesadillas are not covered with a sauce while cooking, it's customary to serve them with a sauce or two on the side. Freshly prepared salsa, guacamole, and sour cream are all good choices.
Step 3: Fry the Quesadillas
- Heat a large cast iron frying pan to medium high heat.
- Melt 1/2 teaspoon small amount of oil or butter .
- Take a tortilla and place it in the pan.
- Cook for 15 seconds on one side to soften, then flip it over to the other side.
- Place the ingredients on the lower half of the tortilla.
- Fold the top of the tortilla over, and press down with the spatula.
- Cook until cheese begins to melt, then flip the tortilla over and finish cooking on the other side.
