Step 1: Gather Your Ingredients
- 2 1/2 cups sugar
- 2/3 cup evaporated milk
- 3/4 cup pumpkin puree
- 1 tsp. cinnamon
- 1 7-oz. jar marshmallow creme
- 2 tbsp. butter
- 1 tsp. vanilla
- 1 cup white chocolate chips
Step 2: Prepare Pumpkin Fudge
- Line a 9"x9" pan with aluminum foil. Spray the foil with non-stick cooking spray.
- Mix the sugar and evaporated milk in a medium saucepan over medium heat.
- Bring the mixture to a boil, stirring occasionally.
- Stir in the pumpkin puree and cinnamon, bringing the mixture back to a boil.
- Add in the marshmallow cream and butter. Bring the mixture to a rolling boil and cook for 18 minutes or until a candy thermometer registers 234 degrees F.
- Remove the mixture from heat and stir in the vanilla and white chocolate chips. Continue to stir until well combined and creamy.
- Pour the mixture evenly into your prepared 9"x9" pan.
- Allow the fudge to cool for at least two hours.
- Lift the fudge and aluminum foil from the pan. Cut into pieces of your desired size, serve and enjoy!
Step 3: Pumpkin Fudge Variations
- For additional flavor, add nutmeg or pumpkin pie spice.
- Rather than using white chocolate chips, try using dark chocolate or butterscotch chips.
- Top with pecans or walnuts is desired.
