Alternate Pumpkin Cookies Recipe
Young chef Tyler shows how to make his version of pumpkin cookies in this informative video. Rather than butter, he uses shortening. Also, he mixes all the ingredients together in one large bowl, opposed to mixing the wet and dry ingredients together separately. To cut down on the elbow grease, Tyler also uses an electric mixer. He does not use the icing, but suggests for an added treat, chocolate chips can be added.

Step 1: Gather Your Ingredients
Cookie Ingredients
- 2 1/2 cups flour
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 cup butter, softened
- 1 1/2 cups sugar
- 1 egg
- 1 cup pumpkin puree
- 1 tsp. vanilla
Icing Ingredients
- 1 tbsp. butter, melted
- 3 tbsp. milk
- 1 tsp. vanilla
- 2 cups powdered sugar, sifted
Step 2: Prepare Pumpkin Cookies
- Preheat your oven to 350 degrees F. Lightly grease your cookie sheets.
- Mix the flour, cinnamon, nutmeg, salt, baking powder and baking soda in a large bowl. Set aside.
- In a separate large mixing bowl, beat the butter and sugar until smooth and creamy.
- Add the egg, pumpkin puree and vanilla to the butter and sugar mixture, stirring well until well combined.
- Gradually stir the flour mixture into the pumpkin mixture, combining each portion well.
- Drop the dough in rounded tablespoons onto the greased cookie sheets.
- Bake for 15 to 18 minutes or until the edges are firm and lightly browned.
- Cool on the cookie sheets for five minutes, then transfer cookies to a wire rack to continue to cool.
- Prepare the icing by combining the butter, milk, vanilla and powdered sugar in a medium mixing bowl until smooth and creamy.
- Drizzle the icing over the cooled cookies and allow to set.
- Serve and enjoy or store the cookies in a cool location to later.
