Introduction
While not as popular as traditional pumpkin desserts like pumpkin pie or pumpkin rolls, pumpkin chocolate chip cake is a unique and yummy treat often served around Halloween, Thanksgiving and Christmas. Similar to making any cake, you'll need to gather and mix your ingredients, bake and top with the drizzle. -
Step 1: Gather Your Ingredients
Cake Ingredients
- 2 cups canned pumpkin puree
- 1 cup cooking oil
- 4 eggs
- 3 cups flour
- 2 cups sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tbsp cinnamon
- 1 tbsp pumpkin pie spice
- 1 tsp salt
- 1 small bag chocolate chips
Drizzle Ingredients
- 2 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tbsp milk
- 1/4 tsp vanilla
- 1/4 tsp cinnamon
Step 2: Prepare Pumpkin Chocolate Chip Cake
- Preheat your oven to 350 degrees F
- Grease and dust either a 13x9 baking pan or bundt pan
- Mix the pumpkin, oil and eggs in a large bowl
- Mix the flour, sugar, baking powder, baking soda, 1 tbsp cinnamon, pumpkin pie spice and salt in a medium bowl
- Add the dry mixture to the wet mixture one cup at a time, mixing thoroughly
- Fold in the chocolate chips
- Put the batter into your greased and dusted pan
- Bake for one hour, or until a toothpick inserted to the center of the cake comes out clean
- Cool in the pan on a cooling rack
- Mix the cream cheese, powdered sugar, milk, vanilla and 1/4 tsp cinnamon in a small saucepan over low heat
- Cook 3-5 minutes until the mixture is creamy and smooth
- Spoon the drizzle over the cooled cake
- Cut, serve and enjoy
Step 3: Pumpkin Chocolate Chip Cake Variations
- A boxed cake mix can be substituted, prepared according to listed directions and mixed with the pumpkin and chocolate
- Mini chocolate chips may be used
- Cake may be cooked in greased or lined cupcake pans, reducing baking time to 20-25 minutes
- Drizzle can be replaced by whipped cream mixed with cinnamon if desired
- Chopped walnuts may be added after the drizzle if desired
- Add maple syrup to the drizzle if desired
