  • Latkes (also known as potato pancakes) are a traditional fried potato dish often associated with the Jewish holiday of Hanukkah. While variations on the basic latke recipe can be found in many of the different cultures of Eastern Europe, most people still think of latkes as a quintessential "Jewish" food. Regardless of your religion or culture, latkes are a delicious, easy to make treat that you can enjoy both during the holidays and throughout the year. Here's how to make them:

Ingredients

Instructions For Making Latkes

  1. Wash the potatoes thoroughly and then peel them using your Potato Peeler.
  2. Use your box grater to grate the potatoes and onion into thin strips directly into your mixing bowl.
  3. Pour the grated vegetables into your sieve or colander and squeeze out the excess water. Be sure to do this over your sink. After all the water has drained out, put the vegetable mixture back into the mixing bowl.
  4. Add the eggs, flour, salt and pepper to the mixing bowl and mix thoroughly.
  5. Pour the vegetable oil into your frying pan and put it on your stove at medium heat.
  6. Once the oil is warm, take a spoonful of your latke mix and place it in the frying pan. Flatten it out into a disk shape. Do this for as many latkes as you can fit in your frying pan.
  7. Use your spatula to flip the pancakes once each side is browned.
  8. Place your finished latkes on a paper towel lined plate so that the excess oil can drain off.
  9. Serve and enjoy!

Tips & Troubleshooting

  1. Latkes are often served with applesauce or sour cream, although you can experiment with different sauces or dips if you like.

  2. If manually grating your vegetables isn't your idea of a good time, you can always use an electric food processor.

  3. Be sure to squeeze as much of the water out of the mixture as possible. This will help prevent your latkes from falling apart when they're cooked.

  4. If you're making latkes for the holiday of Passover, make sure to use matzoh meal instead of flour so that they meet the Kosher requirements of the holiday.

  5. If you're making a large amount of latkes, you may want to keep the ones you've already made in the oven to stay warm while you cook each successive batch.
