Place the first three ingredients and the yeast in the bowl, then let sit for 5 minutes. Add the flour and salt, and start the mixer on low with the dough hook in place. Step 4: How to Make Pizza Dough by Hand

Even if you are going to use electric gadgets to make your pizza dough regularly, it's a good idea to go through the entire process once by hand so you can learn what the dough should seem like at different stages.
Mix the Pizza Dough
- Pour the water into a large mixing bowl.
- Sprinkle the sugar and yeast on top.
- The mixture should begin to show tiny bubbles after a few minutes as the yeast begins to feed on the sugar.
- Once you see the bubbles, add one cup of flour, the olive oil and the salt. Mix thoroughly.
- Add 4 more cups of flour, mixing well with a large wooden spoon until all the flour is incorporated.
- Place the remaining 1 cup of flour on the counter top (or wherever you will be kneading the dough.
- Pour the contents of the bowl onto the flour.
- Knead the dough until it feels stiff and springy, which should take about 10 minutes. The dough is done when you can poke a finger into the ball and it pops back. Allow the dough to rest for 15 minutes.
- Wash and dry the mixing bowl before coating the inside with olive oil.
- Knead the dough a few more times, until it is smooth.
Rising
- In order to allow the dough to rise, place it in the greased bowl, rolling it around so all sides are coated with oil.
- Place it in a warm place, cover with plastic wrap, and allow it to rise until it is doubled in size. This can take 1-2 hours. You'll know it's ready when you can poke your finger in it and it doesn't spring back at you.
- Turn the dough onto the counter and punch it down, to deflate it.
- Knead a few more times until smooth, then shape and make your pizzas.
Step 5: Rising Alternatives
Sometimes you need pizza dough quickly, and other times you don't need it until tomorrow.- If you are in a hurry, you can use the dough immediately after kneading, without allowing it to rise. It won't be as light as a dough that is allowed to rise, but it will still make good pizza.
- If you are making the dough ahead of time, you can let it rise in the refrigerator for between 8 and 24 hours. Allow it to come to room temperature for about 15 minutes before rolling it out.
