Crimping & Fluting Peach Pie Crust
A lattice crust looks beautiful on a peach pie, with the golden peach filling visible through the lattice. This video shows how to crimp the edges after you have laid the strips across the pie. You need to trim the crust, crimp the edges, and and use teh scraps you trimmed off to patch any places where you need more crust.

Step 1: What You Need to Make Peach Pie
Peach Pie Ingredients
- Pie crust, rolled out to fit a 9 inch pie plate
- 4 cups peeled and sliced fresh or [[How to Freeze Peaches|frozen peaches]
- 4 tablespoons flour
- 1 cup sugar
- 1 tablespoon lemon juice
- 2 tablespoons butter, chopped
- 2 tablespoons milk or cream
- 1 tablespoon sugar
Peach Pie Equipment
- 9 inch pie plate
- Mixing spoons
- Mixing bowl
- Pastry brush
Step 2: How to Make Peach Pie
- Preheat oven to 425 F.
- Line the pie plate with the bottom crust, allow the edges to hang over the sides.
- Combine the flour and sugar in a bowl.
- Add the peaches and lemon juice and mix well.
- Place the filling in the bottom crust.
- Scatter the butter on top of the peaches.
- Place the top crust on the pie, and crimp the top and bottom edges together.
- Brush the top with of the pie with milk or cream, and sprinkle with sugar.
- Make several slits in the top of the pie for steam to escape. These can be straight, or decorative
- Place the pie in the preheated oven, and bake for 10 minutes.
- Reduce heat to 350 F and continue to bake an additional 45 minutes, until crust is browned and filling is bubbling. Stick a knife through one of the steam slits to make sure the peaches are soft and tender.
Step 3: Peach Pie Variations
- Substitute 1 cup of raspberries for 1 cup of peaches to make peach melba pie.
- Replace the top crust with a streusel topping (1/2 cup sugar, 1 stick butter, 1 cup flour mixed with your fingers until it has the texture of coarse crumbs) baking the pie at 350 degrees for the entire baking time, rather than starting at a higher temperature.
- Add a teaspoon of almond extract to the lemon juice if desired.
