How to Make Pancakes in Fun Shapes for Kids

Introduction
Pancakes are a great family breakfast tradition. Light and fluffy pancakes, served with real maple syrup, consumed while reading the Sunday paper, with a good cup of coffee...life doesn't get much better! If you assemble the dry ingredients the night before, making homemade pancakes from scratch will be as fast as using a pancake mix. -
Step 1: Pancake Ingredients
To make 12 pancakes:
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 egg, beaten lightly
- 1 ½ cups milk
- 1 tablespoon lemon juice
- 2 tbsp butter, melted
- 1 teaspoon vanilla
- Additional butter for the griddle
- Real maple syrup

Step 2: How to Make Pancakes
- Combine the dry ingredients in one bowl, and the wet in another.
- Preheat the griddle.
- Add the wet ingredients to the dry, whisking until just combined. Do not overbeat, as that will activate the gluten in the flour and toughen the batter.
- Spray the griddle with nonstick cooking spray, or grease with a tablespoon of melted butter.
- Pour the first batch of pancakes on the griddle, being careful not to let them touch.
- Cook pancakes until bubbles form at the edges of the pancake, about 2-3 minutes.
- Flip the pancakes and cook another 1-2 minutes until cooked through.
- Serve immediately with warm maple syrup and additional butter.

Step 3: Pancake Variations
- Add 1 cup of blueberries to the batter before pouring on griddle.
- Add 1/2 cup of miniature chocolate chips to the batter before pouring on griddle.
- Substitute 1 1/2 cups of buttermilk for the milk, and omit the lemon juice.
- Add 1/2 teaspoon cinnamon to the dry ingredients.
