Step 3: Directions
- In a medium-size saucepan, melt the unsalted butter over medium heat.
- Add the mushrooms and saute until brown, about 5-7 minutes.
- Stir in the flour. You should expect a pasty consistency.
- For 2 minutes, cook the roux (the mixture of flour and cooking fat, or butter) while stirring constantly. It is expected for it to stick to the bottom of the pan.
- Stir in the stock, wine, soy sauce, and pepper, and bring to a boil.
- Allow the sauce to simmer for 5 minutes, stirring constantly and scraping anything that begins to adhere to the bottom of the pan.
- Serve with a ladle or in a sauceboat.
