Introduction
Containing the main ingredient, beer, along with honey, sugar and various spices, this warming winter drink is quick and easy to prepare. You will need to find a small saucepan and a strainer, and you will want to separate one egg, as only the egg yolk is used in this preparation, so put the white away for use in cooking later.
Mulled beer can be enjoyed from a mug, a stein or a handled or standard beer glass.

Step 1: Ingredients & Equipment Needed
Ingredients- 12-16 oz decent-quality beer (standard bottle or can of beer)
- 1 egg yolk
- 2 tsp sugar
- 1 pinch ground nutmeg
- 1 pinch ground ginger, or 1 slice ginger 1/4" long
- 2-5 whole cloves
- 1-2 pinch(es) cinnamon, or 1" section of a cinnamon stick
- 1 tablespoon honey
Equipment NeededStep 2: Heating the Beer and Spices
- Pour the beer into the saucepan and add the spices.
- Heat the beer and spices, over a low heat, to just boiling, turn down immediately.
- The beer will foam but will subside after a minute or so.
- Add the sugar to the egg yolk, in a small bowl, and whisk until it becomes nearly white.
You are now ready to add the yolk/sugar mix to the hot beer.
Step 3: Combining the Yolk and Beer
- To avoid "scrambling" the egg yolk you should temper the yolk mixture before adding to the beer. This is achieved by slowly adding 2 tablespoons of the hot beer to the yolk and mixing thoroughly.
- Now add the yolk mixture slowly to the warm beer and continue heating for 5 minutes, stirring gently.
- Add some honey to taste and stir.
- You may want to pour the mixture through a sieve, in case any of the egg pieces have formed.
- Pour into your mug or glass and enjoy!
