Step 1: What You Need to Make Moussaka
- 6 tablespoons olive oil
- 1/4 cup chopped onion
- 1 pound ground lamb or beef
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1 cup tomato sauce
- 3 eggplants
- 3 eggs, lightly beaten
- 2 cups light cream
- 2 tablespoons minced parsley
- 1 cup dry bread crumbs
- 4 tablespoons melted butter
Step 2: Prepare the Eggplant
- Cut the eggplant into slices 1/4 inch thick, crosswise.
- Sprinkle the eggplant liberally with salt, and allow to drain between paper towels for 30 minutes.
- Heat 4 tablespoons of olive oil in a skillet on medium high heat.
- Brown the eggplant quickly on each side.
- Set the eggplant aside to drain on paper towels
Step 3: How to Make Moussaka
- Preheat the oven to 350 degrees.
- Grease a 2 1/2 quart baking dish.
- Heat 2 tablespoons of olive oil in a skillet and sauté the onion until soft.
- Add the ground meat to the onion and cook until no longer pink.
- Add the seasonings and tomato sauce to the skillet; cover and simmer 30 minutes.
- Mix the eggs, cream, parsley and half cup of bread crumbs together.
- Assemble the moussaka by alternating layers of eggplant and meat sauce together, starting and ending with eggplant.
- Pour the egg custard on top.
- Top with the remaining bread crumbs, then drizzle the melted butter over all.
- Bake 40 minutes, or until set.
