Mississippi Mud Pie
This version of Mississippi Mud Pie, has a pastry crust that is covered with a hard chocolate coating. Toasted pecans are sprinkled over the chocolate before it sets. The filling contains eggs, sugar , butter and chocolate, and is baked until set. The pie is then chilled and topped with fresh whipped cream, and covered with bittersweet chocolate shavings.

Step 1: What You Need to Make Missisippi Mud Pie
- 1 prepared chocolate crumb crust
- 1 cup confectioner's sugar
- 6 oz. semisweet chocolate
- 1/4 cup butter, cut up
- 1/4 cup heavy cream
- 2 tablespoons light corn syrup
- 1 teaspoon vanilla extract
- 2 pints coffee ice cream, softened slightly, divided into two parts
- Whipped cream, if desired
Step 2: How to Make Mississippi Mud Pie
- Heat sugar, chocolate, butter, cream and corn syrup in a small saucepan over low heat, stirring constantly, until smooth.
- Remove chocolate sauce from heat.
- Stir in vanilla extract.
- Cool 15 minutes.
- Spread 1/3 cup of cooled chocolate mixture in the bottom of crust.
- Layer 1 pint ice cream, on top of the chocolate sauce.
- Freeze for 1 hour.
- Spread 1/3 cup chocolate mixture over the ice cream.
- Layer 1 the remaining pint of ice cream on top of the chocolate sauce.
- Spread remaining chocolate sauce on top of the pie.
- Freeze for 2 hours, or until firm.
- Top with whipped cream before serving, if desired.
