Step 1: What You Need To Make Mexican Rice
Lay out all the ingredients before you get started. You may need to adjust the amount of stock depeding on the rice to liquid ratio of the specific rice you're using for the Mexican rice. The combination of 3 1/2 cups of stock and 1 cup of sauce works well for rice with a 2:1 liquid to rice ratio, as 1 cup of sauce provides about 1/2 cup of liquid to the rice.
- 2 tablespoons oil
- 2 cups rice
- 1 cup tomato sauce
- 3 1/2 cups chicken broth
Step 2: How to Make Mexican Rice
- Sauté the rice in the oil over medium heat for a few minutes.
- Add in tomato sauce and mix until the rice is coated with the sauce.
- Add the stock and bring to a boil.
- Cover and simmer on low heat for 20 minutes, or until the rice has absorbed all the liquid.
Step 3: Mexican Rice Variations
Mexican rice can be customized to your family's taste.- Sauté 2 cloves of garlic (minced), 1/2-1 onion (chopped) , and 1 jalapneo pepper ( seeded and minced) in the oil until the onion is soft, before adding the rice if desired.
- Add 1/2 cup peas (cooked), and 1/2 cup finely diced carrots cooked) before serving.
- Add 1 cup of canned black beans (drained) to the rice 5 minutes before its done.
- Add 2 cups of shredded chicken or pork to turn the Mexican rice into a main course.
