What You'll Need
When making mashed potatoes, you will need certain ingredients and equipment. They are listed below:
- 2 lbs. russet potatoes, peeled and quartered
- 2 1/2 tbsp butter (or margarine)
- 2 tbsp plain yogurt (or dairy sour cream)
- 1/2 tsp salt
- 1/8 tsp ground white pepper
- 1/4 cup milk
- 6-quart saucepan
- Small saucepan
- Colander
- Electric mixer, whisk or potato masher
Step 1: Cooking the Potatoes
1. Place potatoes in large saucepan and fill with enough salted water to cover the potatoes. Bring water to a boil.
2. Reduce heat and allow to simmer (covered) for 20 to 25 minutes or until potatoes can be easily pierced with a fork.
Step 2: Mashing the Potatoes
1. Drain potatoes in colander.
2. Place potatoes in mixing bowl, then add butter and yogurt.
3. Mix together in bowl using potato masher. If you are using an electric mixer, use a low speed.
4. Add salt and white pepper and continue to mash.
5. Add milk to soften potatoes. Use warm milk to avoid sticky potatoes. Add more milk for more fluffiness.
