Introduction
A marinara sauce is a simple tomato sauce, suitable for serving over any form of pasta or gnocchi. You can prepare a large batch when you have time and then freeze it in meal sized portions, so it will be as easy to use as commercial marinara sauces. This recipe does not include garlic. If you'd like to add it, you can satué up to 5 cloves with the tomatoes and vegetables. -
Step 1: What You'll Need to Make Marinara Sauce
This recipe will sauce 1 pound of pasta, and can easily be doubled or tripled as needed. Lay out all ingredients before beginning to cook the marinara sauce.
- 2 pounds canned imported Italian plum tomatoes
- 2/3 finely chopped carrot
- 2/3 cup finely chopped celery
- 2/3 cup finely chopped onion
- Salt, to taste
- 1/3 cup extra virgin olive oil

Step 2: How to Make Marinara Sauce
Marinara sauce does not needs a long cooking time. It can be ready less than an hour after you start to chop the vegetables.- Put the tomatoes and vegetables in a saucepan.
- Simmer for 30 minutes.
- Add the olive oil, and cook for an additional 15 minutes, mashing the tomatoes into a pulp with the back of the spoon.
- Taste, and add salt as needed.
Step 3: Marinara Sauce Variations
- Add 1 tablespoon fresh or 1 teaspoon of dried herbs such as marjoram, oregano, or basil while the vegetables are simmering.
- Add 4 teaspoons of either parmesan, romano, or a combination of both cheeses, immediately beore serving.
- Add 1/2 cup heavy cream before serving to create an alla panna sauce.
