Dip & Roll Caramel Apples

A traditional caramel apple coating contains butter and heavy cream, in addition to the sugar used. By reducing the amount of butter used, and substituting evaporated skim milk for the heavy cream, you can reduce the fat in a caramel apple recipe without sacrificing flavor. -
Step 1: Low Fat Caramel Apple Ingredients
- 12 large apples
- 2 cups brown sugar
- 1 cup dark corn syrup
- 1/4 cup water
- 3 tablespoons unsalted butter
- 1/2 cup evaporated skim milk
Step 2: How to Make Low Fat Caramel Apples
- Wash and dry the apples, removing any stickers.
- Place a stick through the core of the apple, and set aside.
- Set a pastry brush in a cup of warm water.
- Bring water to a simmer in a frying pan. (You'll set your caramel sauce in this pan to keep it liquid while dipping, so make sure the saucepan will fit.)
- Add the ingredients to a saucepan.
- Cook over medium-high heat, stirring constantly until the mixture reaches 236 degrees Fahrenheit, brushing the pot's sides with a wet pastry brush to prevent crystals from forming.
- When it reaches 236 degrees, place the saucepan in the skillet, and turn off the heat.
- Dip the apples in the liquid caramel, spooning caramel over the apples as necessary to cover.
- Place apples on a cookie sheet covered with greased foil or waxed paper to cool.
Step 3: Low Fat Caramel Apple Coatings
Most traditional caramel apple coatings, such as coconut, nuts, and chocolate, are not low fat. If you'd like to coat your apples, consider rolling them in one of the following toppings while they are still wet:- Finely chopped dried fruits
