Homemade lobster bisque can be ready in less than one hour! One lobster will create 8 cups of bisque. The lobster is cooked in a mixture of beef and chicken stock which creates a full flavored lobster broth for the bisque base. -

Step 1: Ingredients for Lobster Bisque
Lay out all the ingredients before you begin to cook.- 2 cups beef stock
- 1/4 cup rice
- 3 T butter
- 1 carrot, sliced
- 1 onion, chopped
- 1 bay leaf
- 1/2 t dried thyme
- 1 1 1/2 lb. lobster
- 1 cup white wine
- 4 cups chicken stock
- 1 T tomato paste
- 1 cup cream
- Salt and pepper

Step 2: Kill and Split the Lobster
Kill the lobster right before starting the soup. Split it down the middle, and set aside the roe (if its a female) and the tomalley. Rinse off the lobster and set aside. -

Step 3: How to Make Lobster Bisque
- Put the beef stock and rice in a pot, bring to a boil, and simmer for 15 minutes. Set aside.
- Melt 2 T butter in stockpot, add carrot and celery and sauté until soft, about 5 minutes.
- Add the bay leaf, thyme, and lobster, cover, and cook about 10 minutes, until the lobster shells are red.
- Add the wine and chicken stock and simmer another 15 minutes.
- Remove the lobster and set it aside.
- Strain the broth and discard the vegetables.
- Add the beef stock and rice mixture to the broth.
- Remove the lobster from the shell and chop into small pieces. Discard the shell.
- Melt the remaining tablespoon of butter and sauté the tomato paste, roe, and tomalley until smooth.
- Ad the tomato paste mixture and cream to the soup.
- Whisk until smooth, and add the lobster.
- Serve!
