The pie in the video is made in a rectangular pan, but the tips and techniques demonstrated are appropriate for any size shape of lemon meringue pie. Make sure to spread the meringue all the way to the crust, as it will shrink when it cooks.

Step 1: Lemon Meringue Pie Ingredients
- One prebaked single 9 inch pie crust
- 4 tablespoons cornstarch
- 4 tablespoons flour
- 1/4 teaspoon salt
- 1 1/4 cups sugar
- 1 1/2 cups water
- Grated rind of 1 lemon
- 1/2 cup fresh lemon juice
- 2 tablespoons butter
- 4 egg yolks, slightly beaten
- Meringue topping for 9 inch pie
Step 2: How to Make Lemon Meringue Pie
- Mix cornstarch, flour, salt, sugar, and water in a saucepan.
- Cook over medium high heat, stirring constantly until thick, about 3 minutes.
- Remove from heat and stir in the lemon rind, lemon juice, and butter into the cornstarch mixture.
- Stir 1/2 cup of the hot mixture into the egg yolks, and then add the egg yolks into the remaining mixture in the saucepan.
- Cook, stirring constantly, for 3 more minutes.
- Let cool for 15 minutes, and pour into baked pie shell.
- Preheat the broiler to high.
- Spread the meringue over the filling, create peaks with a spoon.
- Place the pie under the broiler and cook until the peaks are lightly browned.
- Serve at room temperature, or refrigerate for up to two days.
