How to Make Jambalaya
Preheat oven to 350 degrees.
Combine the seasonings in a small bowl, and set aside.
Melt the butter in a 2-quart saucepan over high heat.
Add the ham and cook for 3 minutes, stirring constantly.
Add the chicken, and brown for another 3 minutes, stirring constantly.
Add half of the vegetable mixture, the garlic, and the seasonings you mixed in the bowl.
Lower the heat to low, and cook 5-8 minutes until the vegetables begin to soften.
Add the tomato sauce and cook one minute, scraping up the browned bits from the bottom of the pan.
Add the rest of the vegetables and the tomatoes and stir well.
Add the stock and the rice, and bring to a boil.
Remove from heat.
Pour the mixture into the prepared baking dish.
Bake, uncovered, until the rice is tender, which should take about an hour.
Remove bay leaves and serve.

Omit the tomatoes for a brown jambalaya.
For a true bayou experience, use a can of alligator meat instead of the chicken.
