Step 1: Bake an Even Number of Large Cookies

Form your cookies so that they are larger than normal. A little larger than the mouth of a drinking glass. Chill the cookies in the fridge so that they harden and will be cold for the next step.

Step 2: Prepare the Ice Cream
- Allow your favorite flavor of ice cream to soften so that it is malleable, but do not allow it to melt.
- Fill the bottom of a large, rectangular dish first with plastic wrap then with ice cream about an inch thick.
- Place the rectangular dish filled with ice cream in your deep freezer overnight so that it hardens completely.
Step 3: Assemble the Sandwiches
- Remove your cookies from the fridge and using a large circular cookie cutter, circles out of the cookies.
- Remove the ice cream from the freezer.
- Working quickly, remove the ice cream from the dish by pulling on the plastic wrap.
- Place the ice cream block on a cutting board and cut circles with the circular cookie cutter.
- Quickly assemble a top and bottom to your ice cream sandwich by placing a formed cookie below and over a piece of ice cream.
- Place each cookie on a cookie tray in the freezer as you cut and assemble them.
- When finished, allow the now formed ice cream sandwiches to harden in the freezer uncovered. This should take about an hour.
- Wrap each one individually with plastic wrap. If available, vacuum seal the cookies in packs of 4 for maximum freshness.
