Gyoza are pork and vegetable filled dumplings, wrapped in a thin dough, that are fried and served with a blend of vinegar and soy sauce. They are similar to the Peking ravioli served at Chinese restaurants, but the dough is thinner and gyoza are a bit smaller.
Step 1: What You Need to Make Gyoza
- 1/3 cup chopped boiled cabbage
- 2 tablespoons chopped scallion
- 1/2 pound ground pork
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 2 tablespoons soy sauce
- 1/2 teaspoon garlic salt
- 1 teaspoon ginger, grated
- 20 wonton wrappers
- 1 tablespoon vegetable oil
Step 2: How to Make Gyoza
- Combine all ingredients except for the wrappers and oil in a large bowl.
- Mix with your hands until all ingredients are evenly distributed.
- Place a teaspoon of filling in the center of a wrapper.
- Moisten the wrapper edges with water.
- Fold the wrapper over the filling, forming a semicircle.
- Crimp the edges.
- Repeat until all the wrappers are used.
- Heat vegetable oil in a frying pan.
- Place gyoza in pan, and fry until browned. Do not turn the gyoza.
- Reduce heat to low.
- Add 4 tablespoons of water to the pan.
- Cover the pan and steam until the water cooks down.
- Serve immediately with dipping sauce.
Step 3: Make Gyoza Dipping Sauce
- Combine:
- 1/3 cup soy sauce
- 1/4 cup rice wine vinegar
- 1 tablespoon sesame oil
- 1 teaspoon hot pepper oil
- 1 pinch sugar
- Add 1/2 teaspoon minced garlic, 1/2 teaspoon minced ginger, and/or 2 tablespoons chopped scallions, if desired
