- 5 tablespoons unsalted butter, softened
- 1/2 cup sugar
- 1/2 cup unsulfured molasses
- 1 egg, and one egg yolk
- 1 1/4 cups flour
- 1 tablespoon cocoa powder
- 1 1/4 teaspoons ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup hot milk

How to Make Gingerbread Cupcakes
- Preheat the oven to 350 F
- Place cupcake liners in muffin tin
- Cream the butter and sugar until light and fluffy.
- Add the molasses and the eggs, beating well after combining.
- Mix the flour, cocoa, ginger, cinnamon, allspice, nutmeg and salt in a bowl.
- Add the baking soda to the hot milk.
- Add the flour mixture to the creamed mixture and stir until just combined, then add the milk and soda to the batter.
- Ladle the batter into the cupcake liners, filling each 2/3 of the way full.
- Bake for 25 minutes, or until done.
- Cool completely before frosting.
Gingerbread Cupcake Variations
- Add 1/2 cup of chocolate chips to the batter before baking.
- Add 1/2 cup of dried cranberries or raisins to the batter before baking.
- Skip the frosting, and top the cupcakes with powdered sugar.
