How to Make Gingerbread

If you think that gingerbread is only for houses or cookies, think again! A moist, spicy, sweet quick cake, gingerbread is a wonderful dessert. Serve it plain, with whipped cream, a dollop of sweetened creme fraiche, or topped with butter cream frosting, depending on your mood. -
Step 1: Gingerbread Ingredients
Lay out all the ingredients before you begin to bake. You dont want to get half way through the recipe and realize you're missing a key ingredient.
- 1 stick unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 3/4 cup boiling water
- 3/4 cup molasses
- 2 1/2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons powdered ginger
Step 2: How to Make Gingerbread
- Preheat the oven to 350 F.
- Grease and flour an 8 inch square cake pan.
- Combine thhe dry ingredients and set aside.
- Cream the butter and sugar.
- Add the eggs and beat well.
- Add the molasses and boiling water and mix until combined.
- Add the flour mixture to the batter and combine thoroughly.
- Bake for 35- 45 minutes, until a toothpick inserted into the center of the gingerbread comes out clean.
- Cool for 5 minutes before removing from pan.
- Serve warm, topped as desired.
Step 3: Gigerbread Variations
Gingerbread can be customized to suit your tastes.- Mix in 1 cup of chocolate chips before baking.
- Substitute buttermilk for the boiling water for a richer gingerbread.
- Combine 2 tablespoons melted butter, 1/4 cup dark corn syrup,1 /4 cup brown sugar, and 1/2 cup pecan halves in the pan, then top with 6 canned pear halves, before adding the gingerbread batter to make a pear upside down cake.
- Add 1 cup of raisins or dried cranberries, if desired.
