How to Make Ginger-Glazed Carrots

Ingredients

  • 1/2 lb raw carrots, sliced
  • Water, about 3-4 inches, or enough to cover carrots
  • 1 1/2 tsp ginger, finely minced
  • 1 tbsp butter
  • 1 tbsp honey
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Preparation

1. Bring water to a boil.
2. Add carrots and cover.
3. Cook carrots at medium heat. After five minutes, check carrots for tenderness with a fork. If the fork goes into the carrot with little to no resistance, it is ready.
4. Drain carrots and replace into pot. 
5. Mix ginger, butter and honey into carrots.
6. Simmer uncovered at medium heat for five minutes, or enough time for liquid to reduce to a nice glazed consistency.
8. Add salt and pepper to taste.
9. Transfer carrot mixture to bowl and toss in fresh parsley.
10. Enjoy!
