You'll need a gelato maker to duplicate the texture of Italian gelato exactly, as ice cream makers can incorporate twice as much air as is usually found in gelato. If you only have access to an ice cream maker, slow the freezing process down by using less ice than is recommended; slower freezing will produce a denser product that is closer to the texture of gelato. -

- Warm the milk and cream over low heat.
- Stir in the sugar and salt, cooking until dissolved.
- Bring water to boil in the bottom of a double boiler.
- Off the heat, place the eggs in the top of the double boiler.
- Whisk the warm milk into the eggs.
- Place the top of the double boiler over the boiling water, and cook until thickened, whisking constantly.
- Chill several hours or overnight.
- Add 1 tablespoon vanilla, and mix well.
- Process according to your gelato maker's instructions.

Step 3: Gelato Variations
- Add 3 cups of fruit puree before processing the gelato.
- Melt a cup of cocoa powder and 3 1/2 ounces of chopped bittersweet chocolate in the milk and cream before adding the warm milk mixture to the eggs to make chocolate gelato.
