Step 1: What You'll Need for Chicken With 40 Cloves of Garlic
Lay out all the ingredients before you get started. To feed four people, you'll need:- 4 stalks celery, washed
- 1 whole chicken (about 3 lbs)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1 tablespoon olive oil
- 40 cloves of garlic, peeled (about 3 heads)
Step 2: How to Make Chicken With 40 Cloves of Garlic
- Preheat the oven to 375°F.
- Place the celery in the bottom of a roasting pan
- Season the chicken with thyme, salt, and pepper, and place on top of the celery.
- Place the 40 cloves of garlic around the chicken and drizzle the oil over the garlic.
- Place the pan in the preheated oven and roast, basting occasionally, for 20 minutes per pound or until a meat thermometer at the thigh reads 160°F.
- Remove and let the chicken rest for at least ten minutes before carving.

Chicken with 40 cloves of garlic can be made in the crockpot as well. When preparing it using a crockpot, eliminate the celery, and place the garlic on the bottom of the pot, with the seasoned chicken on top. It will take 4-5 hours on low, or 8- 10 hours on high.
