Step 1: What You Need for Fried Eggplant
Assemble all the ingredients before beginning. You'll need:
- 1 eggplant, about 3/4 pound
- 1 large egg, beaten
- 2 tablespoons cup Italian parsley, minced
- 1/3 cup dry unseasoned bread crumbs
- Salt and freshly ground black pepper
- 1 cup extra-virgin olive oil
Step 2: Prepare the Eggplant
- Salting the eggplant before cooking removes the excess liquid and helps the eggplant soak up less oil.
