Easy Eggnog Cheesecake
Chef Lori Baker from the California Culinary Academy shows how to prepare an easy eggnog cheesecake for the holidays. She starts the crust with crushed gingersnaps cookies mixed with melted butter and pressed into a nine-inch pan. The filling comes from softened cream cheese combined with sugar, eggs, eggnog, nutmeg and brandy. The crust is baked first, then sprayed with cooking spray. Baker carefully pours the filling over the crust, then bakes it again in a hot water bath for about an hour. To top the treat, she uses crystalized, candied cranberries and whipped cream.

Step 2: Prepare Eggnog Cheesecake
- Preheat your oven to 325 degrees F.
- Combine the graham cracker crumbs, sugar and butter in a medium bowl. Mix with a fork until the crumbs are just moistened.
- Press the mixture firmly into the bottom of a nine-inch spring form pan.
- Bake for about 10 minutes. Remove from oven and allow to cool on a wire rack.
- Increase the oven to 425 degrees F.
- Combine the cream cheese, sugar and eggnog in a large mixing bowl. Beat with an electric mixer, if possible, until smooth and creamy.
- Add in the eggs, vanilla, nutmeg and salt. Mix until well combined.
- Pour the filling over the cooled crust in the spring form pan.
- Bake for about 10 minutes, then reduce the heat and bake for 45 minutes longer.
- Remove from oven and using a butter knife, release the cake from the sides of the pan.
- Allow to cool completely, then remove from pan and serve, or refrigerate to enjoy later.
