In this video, Judith Jones, one of Mahalo's expert chefs, shows you how to make edamame salad with mint and parmesan cheese.
Ingredients and Equipment
- 1 1/2 cups edamame, shelled and cooked
- 2 tbsp fresh mint
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 2 tbsp parmesan cheese, shaved
- Salt and pepper to taste

You will also need 2 mixing bowl, a spoon and a serving plate or bowl.
Cooking Process
- To make the dressing, put the olive oil, lemon juice and agave in a bowl and whisk. Set aside.
- Place edamame in a mixing bowl.
- Add the fresh mint, salt and pepper.
- Pour the dressing over the edamame mix and stir all ingredients together.
- Place some of the parmesan cheese on top of the salad.
- Serve and enjoy!
